8 Years professional experience working in restaurants and hotels in the UK and France as well as private chalets in France

Personally I love cooking a good old fashioned roast dinner as there are plenty of different elements to work with!

Scallops!
Do you have a signature dish or a speciality?
Herb crusted loin of lamb with a beetroot and horseradish puree, blanched savoy Cabbage fondant potatoes and a red wine jus
Who has been your biggest chef inspiration and why?
Massimo Bottura. The joy and passion he puts into every dish is truly inspiring
Ski or Board?
Both, but my Snowboarding is my true passion

Making progress with French!
What do you do during the summer?
I live in Meribel year round and work in La Terrasse, La Brasserie in summer alongside hiking, wild swimming and mountain biking
